The Winery

You need great grapes to make great wine. But you also need the proper equipment and people who know how to treat the grapes once they have left the vineyard. Our winery uses modern, Italian-made equipment. We pay attention to detail and have a policy of absolute cleanliness so the natural flavors of the fruit are preserved. Here is a bit more about the process we use to make those grapes into your favorite bottle of Ponte wine!


Harvest

The first step in the wine making process. This can either be done by hand or by a mechanical harvester, we prefer to harvest by hand. By doing this by hand it gives us the advantage to spot the ripest bunches which ensures the wine will be of the highest quality. Also, it is the gentlest means of picking.


Destemming

In most cases, the grapes are then destemmed. Destemming is the process of removing berries from the stems. After the stems are removed from the grapes, they are then passed through the crusher.


Press

Depending on the type of fermentation our Wine Maker is looking for, white wine grapes are either pressed and separated from the skins immediately or added to the tank immediately for fermentation to take place.

For red wines, the skins are left in the juice to add color and body to the wine during the fermentation process. For red wines, the press is used after fermentation.


Fermentation

Fermentation is the process in which the sugars in the tank are converted to alcohol. The insulated steel tanks we use have a cooling jacket to ensure constant temperature during this process.

White wines are placed in the steel tanks to await bottling, while our red wines are only in the tanks about 1 - 4 weeks before transferring to the barrels where the wines will age for up to 2 years.


Barrel Aging

For aging reds and to ferment some of our whites we use oak barrels from France, Hungary and America. Oak barrel aging can have a profound effect on the resulting wine, color, flavor, tannin profile and texture of the wine. We use our barrels for 3-5 years before recycling or using for Port aging.


Bottling

After the wine has been aged it is ready for bottling, for us this is done on site. The bottles arrive and then cleaned in preparation for the wine. Next, the bottles are filled, corked, capsuled and the label is applied. From grape to glass the wine is now ready to be enjoyed.
